Golden Milk (Haldi Doodh)
A turmeric-spiced warm milk — an Indian home remedy drink that's cozy, gently anti-inflammatory, and a classic wind-down before bed. Black pepper isn't optional here: a pinch is what makes the turmeric's curcumin absorbable, so the drink actually does something. Warm, golden, and lightly sweet. If you make it often, a make-ahead Golden Milk Spice Mix (Haldi Doodh Premix) lets you skip measuring and just spoon the blend into milk. Ingredients
- 1 cup milk (dairy, or oat for dairy-free)
- 1/2 teaspoon ground turmeric
- 1/8 teaspoon black pepper, freshly ground
- 1/4 teaspoon ground cinnamon (or a small piece of stick)
- 1/4 teaspoon ground ginger (or 1/2 teaspoon fresh grated)
- 1 to 2 teaspoons honey or maple syrup, to taste
- Pinch of ground cardamom (optional)
Instructions
Warm and infuse
- Whisk the milk, turmeric, pepper, cinnamon, ginger, and cardamom together in a small saucepan while still cold — this keeps the turmeric from clumping.
- Set over medium-low heat and warm, whisking often, until steaming and the spices are fully dissolved, about 4 to 5 minutes. Don't let it boil over.
Sweeten and serve
- Take off the heat and let it cool for a minute, then stir in the honey (adding it off the heat preserves its flavor and benefits).
- Strain if you used fresh ginger or a cinnamon stick. Pour into a mug and serve warm.
Variations
- Vegan — use oat or almond milk and maple syrup instead of honey.
- Richer — whisk in 1/4 teaspoon ghee or a splash of coconut milk for body and to help absorb the fat-soluble turmeric.
- Stronger remedy — double the ginger and add a tiny pinch of ground clove when fighting a cold.
Notes
- Black pepper is essential — curcumin (turmeric's active compound) is poorly absorbed on its own; piperine from black pepper increases its bioavailability dramatically. The pinch is functional, not for flavor.
- A little fat helps — turmeric is fat-soluble, so whole milk, oat milk, or a touch of ghee improves absorption versus a fat-free base.
- Before bed — warm milk with these spices is a traditional nighttime drink; the warmth and lack of caffeine make it a good wind-down.
- Stains — turmeric stains; wipe spills quickly and use a mug you don't mind.
