Golden Milk Spice Mix (Haldi Doodh Premix)
A dry spice premix for golden milk — whisk the blend once, store it in a jar, and you're a spoonful away from a cup of haldi doodh any time. This is the make-ahead shortcut version: all the warm spices (turmeric, cardamom, pepper, ginger, cloves, allspice) in one jar, so you skip measuring six things every time you want a cup. The honey and vanilla stay out of the jar — they're stirred into the milk fresh. This is cardamom-forward, which gives it a distinctly floral, chai-like warmth.
Makes about 1/4 cup — enough for 12 to 15 cups of golden milk.
For other forms: the Golden Milk drink measures spices per cup (good if you only make it occasionally), and the Golden Paste is a wet turmeric-oil paste (better absorption, fridge-stored). This premix is the dry, grab-and-go middle ground.
Ingredients
- 4 teaspoons ground turmeric
- 4 teaspoons ground cardamom
- 2 teaspoons ground black pepper
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
Method
Mix
- Whisk all the ground spices together in a small bowl until evenly combined and no single color streaks remain.
- Transfer to a small airtight jar. Label and date it.
To make a cup of golden milk
- 1 cup milk (dairy or plant)
- 3/4 to 1 teaspoon golden milk spice mix
- 3/4 teaspoon honey, or to taste
- 1/8 teaspoon vanilla extract
- Heat the milk in a small saucepan over medium heat until warmed through, 3 to 4 minutes. Stir in the honey and vanilla until dissolved.
- Whisk in the spice mix, reduce to medium-low, and simmer 2 to 3 minutes so the flavors blend.
- Pour through a fine strainer into a mug (the spices settle and strain out, leaving a smooth drink). Serve hot.
Storage
- Jar: Keep in a small airtight jar away from light and heat.
- Shelf life: About 6 months at full strength. It stays safe well beyond that — ground spices don't spoil — but the aroma and color fade, so remake when it smells flat rather than warm. Small batches stay vivid.
Notes
- Black pepper is functional, not just flavor — piperine makes turmeric's curcumin far more absorbable, so don't skip it. See Golden Paste for more on turmeric absorption.
- Cardamom-forward by design — this blend uses as much cardamom as turmeric, giving it a floral, chai-like character. If you want it more turmeric-dominant (or to stretch pricey cardamom), halve the cardamom to 2 teaspoons.
- Keep it small and fresh — ground spices fade; a 1/4-cup jar used within a few months stays vivid. Remake when the aroma flattens.
- Strain or not — straining gives a smooth drink; skip it if you don't mind the spices settling at the bottom and want maximum benefit.
- A little fat helps — turmeric is fat-soluble, so whole milk or a plant milk with some fat (oat) carries it better than a fat-free base.
