Vegetable pulao is a light one-pot meal: basmati cooked together with whole spices, aromatics, and mixed vegetables so the rice absorbs the flavor as it cooks. It's the forgiving cousin of biryani — everything goes in one pot, in one step — which makes the two things that can go wrong worth guarding against: too much liquid (sticky rice) and overcooked mush vegetables. Measure the water, add sturdy vegetables with the rice and delicate ones won't need long, and it comes together easily. See the Rice Pulao Guide for the method behind it.
Ingredients
Rice and fat
- 1 cup basmati rice (preferably aged)
- 2 tablespoons ghee or oil
- 1 1/2 cups water
- 3/4 teaspoon salt
Whole spices
- 1 bay leaf
- 1 inch cinnamon stick
- 3 cloves
- 2 green cardamom pods
- 1 teaspoon cumin seeds
Aromatics and vegetables
- 1 small onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit (optional)
- 1 cup mixed vegetables (carrot, beans, peas, cauliflower), cut bite-size
- 2 tablespoons chopped cilantro and mint (to finish)
Instructions
Prep the rice
- Rinse the rice until the water runs mostly clear, then soak 20–30 minutes. Drain well.
Build the base
- Heat the ghee in a heavy pot over medium. Add the whole spices and let them sizzle until fragrant, about 20 seconds.
- Add the onion and cook until soft and pale gold, 4–5 minutes. Stir in the ginger-garlic paste and green chili and cook 1 minute until the raw smell goes.
- Add the vegetables and a pinch of salt; sauté 2–3 minutes. Sturdy ones (carrot, beans, cauliflower) go in now; they'll cook through with the rice.
Toast and cook
- Add the drained rice and toast gently 1–2 minutes until the grains look translucent at the edges — this keeps them separate.
- Pour in the water, add the salt, and stir once. Bring to a boil, then cover, drop to low, and cook undisturbed 12–15 minutes until the water is absorbed and the rice is tender.
Rest and fluff
- Off the heat, rest covered 5–10 minutes, then fork through gently. Fold in the cilantro and mint. Fluffing hot off the boil breaks the grains.
Variations
- Paneer pulao — fold in 1/2 cup lightly pan-fried paneer cubes after fluffing.
- Kashmiri-style — add a pinch of saffron bloomed in warm water and a few fried cashews and raisins.
- Coconut-milk pulao — replace 1/2 cup of the water with coconut milk for a South Indian richness (pairs with kurma).
Storage
- Fridge: Up to 4 days in a sealed container.
- Reheat: Sprinkle water and microwave covered, or steam, to re-soften.
- Freezer: Up to 2 months; cool fully and freeze flat.
Notes
- Measure the liquid — pulao is absorption-cooked, so the water ratio is the doneness. Too much turns it sticky.
- Don't overcook the vegetables — add sturdy veg with the rice; very soft veg (zucchini, peas) can go in near the end. Cut pieces larger so they don't disintegrate.
- Soak and drain — wet, unsoaked rice clumps; soaked-and-drained rice elongates and stays separate.
- Rest before fluffing — 10 minutes lid-on sets the grains so they fork apart cleanly.
