A proper vegetable biryani is not a vegetable pulao — the vegetables are cooked into a bold, moist masala, the rice is parboiled separately to 70–80%, and the two are layered and steamed (dum). That separation is what keeps the grains distinct and the flavor intense rather than one soft one-pot blur. The trick with vegetables is choosing sturdy ones and not overcooking them in the masala, since they get a second round of heat during dum. For the full method behind parboiling, the masala, and the dum, see the Biryani Guide.

Ingredients

Fried onions (birista)

  • 3 large onions, thinly sliced
  • 1/2 cup oil, for frying

Masala

  • 3 tablespoons oil or ghee (from the onion frying)
  • 2 green cardamom, 3 cloves, 1 inch cinnamon, 1 bay leaf
  • 1 1/2 tablespoons ginger-garlic paste
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1/2 cup plain yogurt, whisked
  • 1 teaspoon turmeric
  • 1 1/2 teaspoons red chili powder (preferably Kashmiri)
  • 2 teaspoons garam masala
  • 1 1/4 teaspoons salt
  • 3 cups mixed sturdy vegetables — carrot, cauliflower, beans, potato, bell pepper — cut bite-size
  • 1/2 cup green peas
  • 1/2 cup chopped mint and cilantro

Rice

  • 2 cups aged basmati rice
  • Water for parboiling, salted heavily (like pasta)
  • 1 bay leaf, 3 cloves, 2 green cardamom, 1 inch cinnamon, 1 black cardamom
  • 1 teaspoon salt added to rice after draining

Layering and dum

  • Pinch of saffron soaked in 3 tablespoons warm milk
  • 2 tablespoons ghee
  • Reserved fried onions, mint, and cilantro
  • 1 tablespoon kewra or rose water (optional)
  • 2 tablespoons fried cashews (optional)

Instructions

Fry the onions

  1. Fry the sliced onions in oil over medium heat, stirring often, until deep golden and crisp, 12–15 minutes. Drain on paper towels — they crisp as they cool. Reserve the frying oil.

Cook the masala

  1. In a heavy pot, heat 3 tablespoons of the reserved oil. Add the whole spices and sizzle 20 seconds, then the ginger-garlic paste and cook 1 minute. Add the tomatoes and green chilies and cook until soft and the oil separates.
  2. Lower the heat, add the whisked yogurt along with the turmeric, chili powder, garam masala, and salt; stir constantly so the yogurt doesn't split. Cook 2–3 minutes until it comes together into a thick masala.
  3. Add the vegetables (not the peas yet) and cook over medium only until crisp-tender, 6–8 minutes — they'll finish during dum, so stop short of soft. Stir in the peas and half the mint/cilantro and half the fried onions. Keep it moist, not dry.

Parboil the rice

  1. Rinse the soaked rice (soak 30 minutes beforehand) and drain. Bring a large pot of heavily salted water with the whole spices to a boil. Add the rice and cook only to 70–80% done — the grain bends but has a firm core. Drain immediately and spread to stop the cooking; sprinkle with the extra salt.

Layer and dum

  1. Level the vegetable masala in the pot and layer the parboiled rice over it evenly. Scatter the saffron milk, ghee, remaining fried onions, mint, cilantro, cashews, and kewra/rose water if using.
  2. Cover tightly (foil under the lid or a dough seal) and cook on the lowest heat 20–25 minutes with a tawa or diffuser underneath so the bottom doesn't scorch.
  3. Rest 10 minutes, then fold gently from the sides to lift the layers — never stir.
