Thandai is a chilled, spiced milk cooler — almonds, seeds, saffron, and warm spices blended into cold milk, traditionally drunk in North India during the summer and especially at Holi. The name literally means "something that cools," and it's built to do exactly that: the nut-and-seed base is considered cooling, and served ice-cold it's rich, fragrant, and genuinely refreshing despite being milk-based. You make a spice-nut paste (which keeps), then stir it into cold milk to order.

Ingredients

Thandai paste

  • 15 almonds
  • 2 tablespoons melon seeds (magaz) or extra almonds
  • 1 tablespoon poppy seeds (khus khus)
  • 1 tablespoon fennel seeds (saunf)
  • 1/2 teaspoon peppercorns
  • 6 green cardamom pods
  • 15 to 20 saffron strands
  • 2 tablespoons sugar
  • 1 tablespoon dried rose petals (optional)

To serve

  • 4 cups cold milk
  • Sugar, to taste
  • Chopped pistachios and a few saffron strands, to garnish

Instructions

Make the paste

  1. Soak the almonds, melon seeds, and poppy seeds in warm water for 30 minutes to an hour. Soak the saffron separately in 1 tablespoon warm milk.
  2. Drain the nuts and seeds and blend them with the fennel, peppercorns, cardamom, sugar, rose petals, saffron milk, and a splash of fresh milk into a smooth, thick paste.

Mix and chill

  1. Whisk the paste into the cold milk until fully combined. Sweeten to taste.
  2. Chill for at least an hour (longer is better — the flavors infuse as it sits). For a silky drink, strain before serving.

Serve

  1. Pour over ice, garnish with chopped pistachios and saffron, and serve cold.
