Tahari is the vegetarian one-pot cousin of biryani: spiced potatoes (and often peas) cooked together with the rice in one pot, absorbing a measured amount of liquid — no separate parboil, no layering. It's the forgiving everyday answer to "biryani is too much work," heartier and spicier than a plain pulao because the masala is built up before the rice goes in. The two things to watch: measure the liquid (it's absorption-cooked, so the ratio is the doneness), and cut the potatoes big enough that they don't disintegrate. See the Rice Pulao Guide for the method, and the Biryani Guide for how it differs from a layered biryani.

Ingredients

Rice and fat

  • 1 cup basmati rice (preferably aged)
  • 3 tablespoons oil or ghee
  • 1 3/4 cups water
  • 1 teaspoon salt

Whole spices

  • 1 bay leaf
  • 1 inch cinnamon stick
  • 3 cloves
  • 2 green cardamom pods
  • 1 teaspoon cumin seeds

Masala

  • 1 large onion, thinly sliced
  • 1 1/2 tablespoons ginger-garlic paste
  • 2 green chilies, slit
  • 1 tomato, chopped
  • 1/2 teaspoon turmeric
  • 1 teaspoon red chili powder (preferably Kashmiri)
  • 1 teaspoon garam masala
  • 2 medium potatoes, peeled and cut into large chunks
  • 1/2 cup green peas (optional)
  • 2 tablespoons chopped cilantro and mint (to finish)

Instructions

Prep the rice

  1. Rinse the rice until the water runs mostly clear, then soak 20–30 minutes. Drain well.

Build the masala

  1. Heat the oil in a heavy pot over medium. Add the whole spices and let them sizzle until fragrant, about 20 seconds.
  2. Add the onion and fry until soft and golden, 6–8 minutes. Stir in the ginger-garlic paste and green chilies and cook 1 minute.
  3. Add the tomato, turmeric, chili powder, and garam masala; cook until the tomato breaks down and the oil separates, 3–4 minutes.
  4. Add the potato chunks and a pinch of salt; toss to coat in the masala and cook 3–4 minutes so they start taking on color.

Add rice and cook

  1. Add the drained rice and toast gently 1–2 minutes until the grains look translucent at the edges.
  2. Pour in the water, add the salt and peas, and stir once. Bring to a boil, then cover, drop to low, and cook undisturbed 15–18 minutes until the water is absorbed and both rice and potatoes are tender.

Rest and fluff

  1. Off the heat, rest covered 5–10 minutes, then fork through gently and fold in the herbs. Fluffing straight off the boil breaks the grains.
