Shikanji is North Indian lemonade — but where plain lemonade is just sweet and sour, shikanji adds black salt and roasted cumin for a savory, mineral depth that makes it far more refreshing and thirst-quenching in the heat. It's the classic roadside nimbu pani done properly: bright, tangy, lightly spiced, and genuinely rehydrating thanks to the salt. Five minutes, no cooking, endlessly adjustable.

Ingredients

  • 2 tablespoons fresh lemon or lime juice (about 1 to 2 lemons)
  • 2 to 3 teaspoons sugar, to taste
  • 1/4 teaspoon black salt (kala namak)
  • 1/4 teaspoon roasted cumin powder
  • Pinch of regular salt
  • Pinch of black pepper (optional)
  • 2 cups cold water (or chilled soda for a fizzy version)
  • Ice, mint leaves, and a lemon slice to serve

Instructions

Mix

  1. In a jug, stir the lemon juice, sugar, black salt, roasted cumin, regular salt, and pepper with a splash of the water until the sugar and salt fully dissolve.
  2. Add the rest of the cold water (or soda), taste, and adjust — more lemon for sharpness, more sugar to balance, more black salt for depth.

Serve

  1. Pour over ice, garnish with mint and a lemon slice, and serve immediately.
