American/Tex-Mex "chili powder" is a seasoning blend — not pure ground chile. This is the single most common point of confusion in the spice aisle, and getting it wrong ruins a recipe. The blend (this recipe) is paprika + cumin + garlic + oregano + a little cayenne: mild to medium, more flavor than fire — what US and Tex-Mex recipes mean (chili con carne, taco meat, nachos). Pure ground chile — cayenne, or Indian "lal mirch / red chili powder" — is just ground dried chile: pure heat in small amounts, what Indian recipes mean. They are not interchangeable: swap one for the other and you get either a flat dish or a painfully hot one, so check the cuisine before you reach for a jar. Making your own blend is fresher than any store jar, because the component spices haven't been sitting pre-mixed and fading for months.

Ingredients

  • 2 tablespoons paprika (sweet/plain, or smoked for depth)
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 to 2 teaspoons cayenne pepper (to taste)
  • 1 teaspoon ground coriander (optional, for brightness)
  • 1/4 teaspoon ground cinnamon or allspice (optional, for warmth)

Method

  1. Measure everything into a small bowl. Paprika is the base and should be the largest amount — it carries the color and mild pepper body.
  2. Whisk until uniform, with no clumps of any single spice.
  3. If your oregano is in large flakes, crush it between your fingers as you add it so it blends evenly.
  4. Transfer to a small airtight jar. Label and date it.
