Ingredients
Roast
- 2 cups (200g) besan (chickpea flour / gram flour)
- ½ cup (110g) ghee
Flavoring
- ¾ cup (90g) powdered sugar (bura or icing sugar — not granulated)
- ½ tsp cardamom powder
- 2 tbsp cashews, finely chopped
- 1 tbsp raisins (optional)
Instructions
Roast
- Heat ghee in a heavy-bottomed pan over medium-low heat until fully melted and shimmering.
- Add besan all at once. Stir continuously with a wooden spoon or silicone spatula — no breaks. The mixture will look clumpy at first, then loosen into a paste.
- Keep stirring on medium-low heat for 20–25 minutes. The color will progress from pale yellow to golden to a deep amber. Stop at amber — if it starts going brown, pull the pan off the heat immediately. The mixture should smell rich and nutty, like roasted chickpeas, and will begin pulling away slightly from the sides of the pan.
- Remove from heat. Spread onto a clean plate or tray and leave to cool for 5–7 minutes. You want warm, not hot — if you can't hold a small pinch comfortably in your palm, it needs more time.
Mix
- Transfer the cooled besan back to the pan or a large bowl.
- Add powdered sugar, cardamom, cashews, and raisins. Mix thoroughly until evenly combined. Powdered sugar is essential here — granulated sugar won't incorporate smoothly and leaves a gritty texture.
Shape
- Pinch off a portion roughly the size of a golf ball and roll between your palms into a smooth sphere. The mixture should hold together with light pressure.
- If it crumbles: the mixture has cooled too much. Return it to the pan briefly over the lowest heat for 30 seconds and try again.
- If it's sticky or won't hold a clean shape: it's still too warm. Give it another few minutes.
- Continue shaping all 20 laddoos. Set them on a plate; they'll firm up as they reach room temperature.
Storage
- Room temperature: Airtight container for up to 2 weeks. The ghee keeps the mixture from drying out.
- Fridge: Up to 1 month. Bring to room temperature before eating — cold laddoos lose some of their texture.
Variations
- Coconut version: Toast 3 tbsp desiccated coconut alongside the besan for the final 5 minutes. Adds texture and a subtle sweetness.
- Pistachio: Replace cashews with finely chopped unsalted pistachios for a more delicate flavor and a fleck of green color.
- Jaggery version: Replace powdered sugar with an equal weight of very finely grated jaggery. Mix in while the besan is slightly warmer than usual — jaggery needs the extra heat to blend smoothly. Flavor is richer and more complex.
Notes
- Don't rush the roasting on high heat. Besan scorches quickly on the outside while staying raw inside. Medium-low and patience is the only reliable path.
- The exact roasting time varies with pan, flame, and humidity. Use color and smell as your guide, not the clock.
- If your laddoos have a slightly grainy texture rather than smooth, the sugar wasn't fine enough. Run powdered sugar through a sieve before using.
