Ingredients
Sugar syrup
- 1½ cups water
- ½ cup (100g) sugar
- 4–5 green cardamom pods, lightly crushed
- Pinch of saffron strands soaked in 2 tbsp warm milk (optional)
Halwa
- ½ cup (110g) ghee
- 1 cup (100g) besan (chickpea flour / gram flour)
- 2 tbsp cashews, roughly chopped
- 1 tbsp raisins
Garnish
- 1 tbsp slivered almonds or pistachios
Instructions
Make the syrup
- Combine water, sugar, and cardamom in a small saucepan. Bring to a boil, stirring until sugar dissolves. Add saffron milk if using. Keep warm on low heat — the syrup must be hot when it meets the roasted besan.
Toast
- Heat ghee in a heavy-bottomed pan over medium heat.
- Add cashews and fry 1–2 minutes until golden. Remove and set aside.
- Add raisins and fry 30 seconds until puffed. Remove and set aside.
- Add besan to the remaining ghee. Reduce heat to medium-low and stir continuously. Besan goes through clear stages:
- 5 minutes: still pale, slightly raw smell — keep going
- 10 minutes: turning golden at the edges, beginning to smell nutty
- 15–20 minutes: deep amber throughout, smells caramel-nutty, pulls slightly from the pan Stop here. If it smells acrid or brown patches appear, the heat is too high.
Cook
- Reduce heat to low. Pour the hot sugar syrup into the roasted besan carefully — it will sizzle aggressively. Stir immediately and continuously to prevent lumps.
- Increase heat to medium. Cook, stirring constantly, for 3–5 minutes until the syrup is fully absorbed and the halwa is smooth and glossy.
- The halwa is done when it pulls away from the sides of the pan slightly and the ghee glistens at the edges.
Finish
- Fold in fried cashews and raisins.
- Serve warm in bowls, garnished with slivered almonds or pistachios.
Storage
- Room temperature: Up to 1 day, covered.
- Fridge: Up to 4 days. Reheat in a pan with a tablespoon of ghee or water over low heat, stirring until smooth.
- Freeze: Portions freeze well for up to 1 month.
Variations
- Besan laddoo: Same roasted besan base but finished dry with powdered sugar and shaped into balls. See Besan Laddoo.
- Richer version: Replace 2 tbsp water in the syrup with whole milk for a creamier result.
- Jaggery version: Replace sugar with equal weight of grated jaggery. Make the syrup the same way.
Notes
- The roasting time varies with pan size and heat — go by color and smell, not the clock. A wider pan roasts faster but requires more attention.
- Hot syrup is non-negotiable. Cold syrup hitting hot besan causes lumps that are nearly impossible to stir out.
- Besan halwa is softer and more yielding than sooji or atta halwa — it won't pull away from the pan as decisively. Judge doneness by the ghee separating at the edges and the smooth, glossy appearance.
