Ingredients

Sugar syrup

  • 2 cups water
  • ¾ cup (150g) sugar
  • 4–5 green cardamom pods, lightly crushed
  • Pinch of saffron strands (optional)

Halwa

  • ½ cup (110g) ghee
  • 1 cup (160g) fine sooji (semolina)
  • 2 tbsp cashews, roughly chopped
  • 2 tbsp raisins

Garnish

  • 1 tbsp slivered almonds or pistachios

Instructions

Make the syrup

  1. Combine water, sugar, cardamom pods, and saffron in a small saucepan. Bring to a boil, stirring until sugar dissolves. Keep warm on low heat — the syrup must be hot when it goes into the sooji.

Toast

  1. Heat ghee in a wide, heavy-bottomed pan over medium heat.
  2. Add cashews and fry 1–2 minutes until light golden. Remove and set aside.
  3. Add raisins and fry 30 seconds until puffed. Remove and set aside.
  4. Add sooji to the pan. Toast on medium-low heat, stirring continuously, for 8–10 minutes until it turns an even golden-amber color and smells nutty. This stage takes patience — even, deep toasting is what gives halwa its flavor.

Cook

  1. Reduce heat to low. Stand back slightly and pour the hot sugar syrup into the toasted sooji all at once. It will bubble and splutter vigorously — this is normal.
  2. Stir immediately and continuously with a wooden spoon to prevent lumps.
  3. Increase heat to medium. Keep stirring — the mixture will look loose at first, then gradually absorb all the liquid and thicken, 4–5 minutes.
  4. When the halwa starts pulling away from the sides of the pan and the ghee begins to separate and glisten on the surface, it's done.

Finish

  1. Fold in fried cashews and raisins.
  2. Serve immediately in bowls or press into a greased plate and cut into portions. Garnish with slivered almonds or pistachios.
