A chilled rose cooler — the pink, floral summer drink that Rooh Afza made famous across the subcontinent. At its heart is a rose-scented sugar syrup (sharbat) you make once and keep; to serve, you stir a few spoonfuls into cold milk or water. Cooling, fragrant, and nostalgic, it's a staple of Indian summers and Ramadan iftar tables. The homemade syrup is cleaner-tasting than the bottled concentrate and lets you control the sweetness and rose intensity.

Ingredients

Rose syrup (makes about 1.5 cups)

  • 1 cup sugar
  • 1 cup water
  • 1/4 cup dried rose petals (food-grade) — or 2 to 3 tablespoons rose water
  • 1 teaspoon lemon juice
  • Pinch of cardamom (optional)
  • A drop of natural pink/red color (optional, for the classic look)

To serve

  • Cold milk or water
  • Ice, soaked basil seeds (sabja), and rose petals to garnish

Instructions

Make the syrup

  1. Combine the sugar and water in a saucepan and bring to a simmer, stirring until the sugar dissolves.
  2. Add the dried rose petals (if using) and cardamom, and simmer gently for 8 to 10 minutes until the syrup thickens slightly and takes on color and aroma.
  3. Take off the heat, stir in the lemon juice (and rose water if using that instead of petals, added off the heat so the aroma survives). Cool, then strain into a clean bottle. It keeps in the fridge for several weeks.

Serve

  1. For each glass, stir 2 to 3 tablespoons of rose syrup into a tall glass of cold milk or water.
  2. Add ice, a spoon of soaked basil seeds, and a few rose petals. Stir and serve cold.
