Dry-roasting cumin seeds drives off moisture, intensifies the natural oils, and produces a richer, nuttier flavor than raw cumin powder. Used as a finishing spice — added after cooking or sprinkled directly on raita, chaat, lassi, and dal. Takes 5 minutes.
Ingredients
- 1/2 cup (50g) whole cumin seeds
Method
- Place cumin seeds in a wide, heavy-bottomed pan over low-medium heat. No oil.
- Stir continuously until the seeds darken two shades and smell toasty and nutty — about 4–5 minutes. They should not smoke or smell bitter.
- Spread on a plate and cool completely before grinding.
- Grind to a fine powder in a spice grinder. Store immediately — the aroma fades quickly once ground.
Storage
- Container: Airtight jar away from light.
- Shelf life: 1–2 months. Grind in small batches and use up quickly for best flavor.
Notes
- This is a finishing spice, not a cooking spice. Add it at the end or at the table — heat destroys the roasted character you just built.
- Used in raita, lassi, chaat, dal tadka, and anywhere cumin powder is called for when you want more depth.
