Ingredients
- 1 English cucumber, finely diced
- 2 medium tomatoes, finely diced
- 1/2 small onion, finely diced
- 2 tbsp extra virgin olive oil
- Juice of 1 lime or lemon
- 1/4 tsp dried mint
- Salt and black pepper to taste
Optional
- Fresh mint, finely chopped
- 1 garlic clove, minced
- 1 avocado, diced
- Sour grape juice (verjuice) instead of citrus
Instructions
Assemble
- Dice cucumber, tomatoes, and onion into small, even pieces — roughly 1cm dice.
- Combine in a bowl. Season with olive oil, citrus juice, dried mint, salt, and pepper.
- Toss well. Taste and adjust acid and salt.
- Rest 5 minutes before serving to let flavours meld.
Serve
- Serve on its own or on a bed of hummus with warm pita.
Storage
- Best eaten fresh. Can sit refrigerated up to 1 day — vegetables release water and it gets wetter over time.
Variations
- With avocado — fold in diced avocado just before serving for richness.
- More herby — add a small handful of fresh parsley or mint alongside the dried mint.
