Despite the name, pumpkin spice contains no pumpkin — it's a warm baking blend of cinnamon, ginger, nutmeg, allspice, and cloves, named for the spices traditionally used in pumpkin pie. Making your own means you control the balance (most store blends are cinnamon-heavy) and you skip paying a premium for spices you already own. Cinnamon leads; the others fill in warmth and depth behind it.
Ingredients
- 3 tablespoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground nutmeg (freshly grated is best)
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
Method
- Measure everything into a small bowl. The 3:2:2:1:1 ratio (cinnamon:ginger:nutmeg:allspice:cloves) is a starting point — cinnamon should clearly dominate, with the others supporting.
- Whisk until evenly combined and no streaks of any single spice remain.
- Transfer to a small airtight jar. Label and date it.
Notes
- Freshly grated nutmeg makes a noticeable difference here — it's the most fragrance-dependent spice in the blend and fades fastest pre-ground. If you have whole nutmeg, grate it fresh.
- Taste and adjust. Want it warmer? Add a pinch more ginger or cloves. Want it rounder and sweeter-smelling? Lean on cinnamon and nutmeg. Cloves are the easiest to overdo — they turn medicinal fast, so add them last and sparingly.
- Small batch on purpose. Ground spices fade, so make a little and remake it rather than storing a large jar that goes flat.
Uses
- Lattes and warm drinks — 1/4 teaspoon stirred into coffee, warm milk, or a chai-style latte.
- Baking — 1 to 2 teaspoons in cookie dough, quick breads, banana bread, or muffins.
- Breakfast — a pinch over oatmeal, yogurt, or French toast batter.
- Buttered toast — with a little sugar, like cinnamon toast with more depth.
Storage
- Container: Airtight jar, away from light and heat.
- Shelf life: About 6 months. It stays safe well beyond that, but the aroma fades — remake when it smells flat rather than warm and spiced.
Variations
- Cinnamon-forward — increase cinnamon to 4 tablespoons for a milder, sweeter blend.
- Extra warmth — add 1/2 teaspoon ground mace or a pinch of black pepper.
- No cloves — if cloves taste medicinal to you, leave them out and add an extra 1/2 teaspoon allspice, which carries a gentler clove-like note.
