Ingredients
- 1/2 cup Greek yogurt
- 1/4 cup granola
- 1/2 cup fresh or frozen fruit (thawed)
- 1 tablespoon honey or maple syrup (optional)
Builds more flavour
- Pinch of cinnamon or cardamom stirred into the yogurt
- 1 tablespoon nut butter swirled through a yogurt layer
- 1 tablespoon chia seeds or hemp seeds
Instructions
Assemble
- Spoon half the yogurt into a glass or jar.
- Add a layer of fruit, then a layer of granola.
- Spoon the remaining yogurt on top. Finish with more fruit and a drizzle of honey.
Storage
- Meal prep: Layer yogurt and fruit in advance, keep granola in a separate container. Add granola just before eating to keep it crunchy. Keeps 4–5 days in the fridge.
- Pre-layered: If you don't mind softer granola, fully assembled jars keep 2–3 days. The granola absorbs moisture from the yogurt overnight — some people prefer this texture.
Variations
Mixed berry — Use strawberries, blueberries, and raspberries. Stir 1/2 teaspoon vanilla into the yogurt. Drizzle honey over the top layer.
Pina colada — Use pineapple chunks and sliced mango. Swap 2 tablespoons of the yogurt for coconut cream and stir together. Top with toasted coconut flakes.
Savoury — Skip the honey. Use plain yogurt, cucumber, cherry tomatoes, and a drizzle of olive oil with za'atar. Works as a light lunch.
Notes
- Greek yogurt holds its layers better than regular yogurt — it's thicker so the granola doesn't sink.
- Frozen fruit works well for meal prep; it thaws in the fridge overnight and releases juice that pools at the bottom in a good way.
