Lemon rice is a South Indian tempered rice: a hot tadka of mustard seeds, curry leaves, peanuts, and turmeric folded through cooked rice, finished with lemon juice off the heat. It's the classic use for day-old rice — dry, cooled grains fry up separate instead of turning to paste — and it comes together in minutes once the rice is ready. The one rule that makes or breaks it: lemon juice goes in at the very end, off the heat, or it turns flat and faintly bitter. See the Rice Pulao Guide for why tempered rices start from cooled rice.

Ingredients

Rice

  • 3 cups cooked, cooled rice (day-old is ideal)

Tempering

  • 2 tablespoons oil (or ghee)
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal (optional, for crunch)
  • 2 tablespoons raw peanuts
  • 1 dried red chili, broken
  • 10–12 curry leaves
  • 1 green chili, slit (optional)
  • 1/4 teaspoon turmeric
  • 1 pinch asafoetida (hing)

To finish

  • 2 to 3 tablespoons lemon juice (about 1 lemon)
  • 3/4 teaspoon salt (or to taste)
  • 2 tablespoons chopped cilantro

Instructions

Loosen the rice

  1. If the rice is clumped, gently fork it apart so the grains separate. Cooled, day-old rice works best; freshly cooked hot rice turns sticky when tossed.

Make the tempering

  1. Heat the oil in a wide pan or kadhai over medium. Add the mustard seeds and wait until they crackle and pop. Add the chana dal and peanuts and fry until golden.
  2. Add the dried red chili, curry leaves, green chili, and a pinch of asafoetida — stand back, the curry leaves will splutter. Fry 10 seconds until aromatic.
  3. Lower the heat and stir in the turmeric; let it bloom in the oil for a few seconds (don't let it scorch).

Fold and finish

  1. Add the rice and salt, and toss gently over low heat until every grain is coated yellow and heated through, 2–3 minutes.
  2. Turn off the heat. Add the lemon juice and cilantro and fold through. Adding lemon off the heat keeps it bright; cooking it makes the dish taste flat and slightly bitter. Taste and adjust salt and lemon.
