Jeera rice is the simplest flavored rice — plain basmati perfumed with cumin toasted in ghee — and the default partner for dal, rajma, or any curry that would drown plain rice. The whole dish turns on two things: cumin bloomed in hot fat until it's fragrant and a shade darker (not black), and rice that's soaked and absorption-cooked so every grain stays separate. Get the cumin right and the rice right, and there's nothing else to it. For why each step matters, see the Rice Pulao Guide.

Ingredients

  • 1 cup basmati rice (preferably aged)
  • 2 tablespoons ghee (or oil for vegan)
  • 1 1/2 teaspoons cumin seeds
  • 1 bay leaf (optional)
  • 1 1/2 cups water
  • 3/4 teaspoon salt
  • 1 tablespoon chopped cilantro (optional, to finish)

Instructions

Prep the rice

  1. Rinse the rice in a few changes of water until it runs mostly clear, then soak 20 minutes. Drain well in a sieve — surface water makes grains steam and clump instead of toasting.

Bloom the cumin

  1. Heat the ghee in a heavy pot over medium. Add the cumin seeds (and bay leaf) and let them sizzle 15–20 seconds until fragrant and just a shade darker — this is where the flavor comes from. Pull back the heat the moment they smell toasty; burnt cumin turns bitter.

Toast and cook

  1. Add the drained rice and toast, stirring gently, for 1–2 minutes until the grains turn translucent at the edges and smell nutty. This coats them in fat so they stay separate.
  2. Add the water and salt, stir once, and bring to a boil. Cover, drop the heat to low, and cook undisturbed 12–15 minutes until the water is absorbed and the grains are tender.

Rest and fluff

  1. Off the heat, keep the lid on and rest 5–10 minutes — the grains firm up and finish in their own steam. Then fork through gently to fluff; fluffing straight off the boil breaks grains. Scatter cilantro if using.
