Ingredients
Base
- 2 cups (180g) desiccated coconut, unsweetened
- ¾ cup (240g) sweetened condensed milk
- 1 tbsp ghee
Flavoring
- ½ tsp cardamom powder
- Pinch of saffron soaked in 1 tbsp warm milk (optional)
Finishing
- ¼ cup (25g) desiccated coconut, for rolling
Instructions
Toast
- Heat ghee in a non-stick or heavy-bottomed pan over medium heat.
- Add the 2 cups of coconut. Stir on medium heat for 2–3 minutes until the coconut smells fragrant and the edges just start to turn the faintest gold. You're not toasting it deeply — just waking up the flavor. Don't let it brown.
Cook
- Pour in the condensed milk and saffron milk if using. Stir immediately to combine everything.
- Cook on medium heat, stirring constantly, for 8–10 minutes. The mixture will look loose and wet at first. Keep stirring — it will gradually thicken and pull away from the sides.
- The mixture is ready when it collects into a single mass that moves with the spoon and leaves the sides and base of the pan cleanly. If you drag the spoon through the centre, the gap should hold for a moment before slowly closing.
- Remove from heat. Stir in cardamom. Let cool for 10 minutes — it should be warm enough to be pliable but cool enough to handle.
Shape
- Spread the extra ¼ cup coconut on a small plate for rolling.
- Pinch off portions roughly the size of a large marble and roll between your palms into smooth balls.
- Roll each ball in the extra coconut and press lightly so it adheres.
- Set on a plate. The laddoos will firm up further as they cool to room temperature.
Storage
- Fridge: Up to 1 week in an airtight container. These are dairy-based and won't keep long at room temperature in warm climates.
- Room temperature: 2–3 days maximum in a cool kitchen.
- Freeze: Not recommended — the condensed milk changes texture when frozen and thawed.
Variations
- Khoya version: Replace condensed milk with 200g crumbled khoya. Cook the same way; the mixture will come together in a similar time. Less sweet, more milky in flavor.
- Rose water: Add ½ tsp rose water off the heat along with the cardamom for a floral, North Indian note.
- Pistachio-rolled: Roll in finely crushed pistachios instead of coconut for a more festive look and a contrasting crunch.
- Pink laddoos: Add a drop of pink food coloring to the mixture while cooking — popular at weddings and celebrations.
Notes
- Sweetened condensed milk brands vary in sweetness. Taste the mixture before shaping — if it's too sweet for you, a pinch of salt will balance it.
- If the mixture seems too wet after 10 minutes, keep cooking — different brands of coconut absorb liquid at different rates. Two more minutes usually does it.
- Coconut laddoos are more delicate than besan or rava laddoos. Handle them gently when rolling — they firm up fully only after 20–30 minutes at room temperature.
