- 1/2 cup milk of your choice
- 2 tbsp chia seeds
- 1 1/2 tsp maple syrup (or honey)
Toppings (choose any)
- Fresh or frozen fruit
- Granola, nuts, or seeds
- Nut butter
- Applesauce
- Coconut flakes or cacao nibs
- Cinnamon or cardamom
Instructions
Prep
- Mix chia seeds, milk, and maple syrup together in a jar or container.
- Let sit 5 minutes, then stir again — this breaks up clumps and is important for a smooth texture.
- Cover and refrigerate overnight, or at least 2–3 hours.
Serve
- Stir once more before eating.
- Add toppings and serve cold, or warm briefly in the microwave if preferred.
Storage
- Fridge: Up to 5 days unsealed.
- Freezer: A few weeks. Thaw overnight in the fridge.
- Add frozen fruit before refrigerating — it thaws at the same time as the pudding sets.
Variations
- Chocolate — add 1 tsp cocoa powder and a pinch of salt. Top with banana and peanut butter.
- Tropical — use coconut milk, top with mango and toasted coconut.
- Berry — blend 1/4 cup frozen berries into the milk before mixing for a coloured base.
- Protein — stir in 1 scoop vanilla protein powder; add a splash more milk to loosen.
