Ingredients

Sugar syrup

  • 2 cups water
  • ¾ cup (150g) sugar
  • 4–5 green cardamom pods, lightly crushed
  • Pinch of saffron strands (optional)

Halwa

  • ½ cup (110g) ghee
  • 1 cup (120g) whole wheat flour (atta)
  • 2 tbsp cashews, roughly chopped
  • 2 tbsp raisins

Garnish

  • 1 tbsp slivered almonds or pistachios

Instructions

Make the syrup

  1. Combine water, sugar, and cardamom in a saucepan. Bring to a boil, stirring until sugar dissolves. Add saffron if using. Keep warm on low heat — the syrup must be hot when added to the flour.

Toast

  1. Heat ghee in a wide, heavy-bottomed pan over medium heat.
  2. Add cashews and fry 1–2 minutes until golden. Remove and set aside.
  3. Add raisins and fry 30 seconds until puffed. Remove and set aside.
  4. Add atta to the remaining ghee. Reduce heat to medium-low and toast, stirring continuously, for 10–15 minutes. Atta takes longer than sooji — be patient. The flour should turn a deep golden-brown and smell nutty and toasted, not raw. Pale flour produces a flat-tasting halwa.

Cook

  1. Reduce heat to low. Pour the hot sugar syrup into the toasted atta carefully — it will bubble vigorously. Stir immediately and continuously.
  2. Increase heat to medium and keep stirring as the mixture absorbs the liquid, 4–5 minutes.
  3. When the halwa pulls away from the sides of the pan and ghee begins to glisten at the edges, it is done.

Finish

  1. Fold in fried cashews and raisins.
  2. Serve immediately or press into a greased plate and cut into portions. Garnish with slivered almonds or pistachios.
